INGREDIENTS

Ingredients for the salad:

6 cups fresh kale
4 cups of cabbage
¼ red onion, julienned
¼ cup chopped cilantro
½ cup feta cheese
¼ cup roasted chile peanuts
¼ cup Japanese peanuts

Ingredients for the vinaigrette:

1 tablespoon apple cider vinegar
1 tablespoon rice vinegar
1 tablespoon lemon juice
2 teaspoons Dijon mustard
1 tablespoon honey
¼ cup salted peanuts
¼ cup salted cashew nuts
Salt and pepper to taste
2 tablespoons sesame oil
2 tablespoons olive oil

PROCESS

For the salad, mix all ingredients in a serving bowl and toss.
To prepare the vinaigrette, place all the ingredients in a food processor and process to the right consistency.
If it is too thick for your taste, you can add more water.
