INGREDIENTS

2 eggs
Salt and pepper to taste
2 tablespoons oil divided
1 tablespoon onion, minced Grated mozzarella cheese
¼ cup of Taqueritos Chile Toreado

PROCESS

Beat the eggs and add salt and pepper to taste.
Heat a tablespoon of oil in a non-stick pan and fry the onion over medium heat until transparent and add it to the egg.
In the same skillet add the other tablespoon of oil and raise the temperature to medium high heat. Add the egg and cook until set.
Flip it over with the help of a spatula or lid. Add the cheese and the Taqueritos and close the omelette.
Reduce the heat to medium low and cook until the cheese is melted.
